Recipe: Flourless Peanut Butter Cookies

Here’s something my sisters used to always make for me when we were little. I love my peanut butter cookies creamy, without any nuts. The only crunch comes from the crispy edges. I would devour these right out of the oven, happily burning my mouth with the melting soft peanut butter richness. I always think of my sisters whenever I see a peanut butter cookie.

This recipe for Flourless Peanut Butter Cookies originally includes an optional 2 tablespoons chopped peanuts or 1/4 cup mini chocolate chips if you prefer.

Yield: 2 dozen
Time: Total 25 Minutes
Ingredients:
1 cup smooth peanut butter
1 cup sugar
1 teaspoon baking soda
1 extra-large egg, lightly beaten

1) Preheat the oven to 350° and position 2 racks in the upper and lower thirds.

2) In a medium bowl, mix the peanut butter with the sugar, baking soda and egg.

3) Roll tablespoons of the dough into 24 balls. Set the balls on 2 baking sheets, and using a fork, make a crosshatch pattern on each cookie.

4) Bake for 15 minutes, shifting the baking sheets from front to back and bottom to top, until the cookies are lightly browned and set. Let cool on a wire rack.
