Recipe: Meatball Souvlaki Pita Sandwich

I rarely eat beef but I like treat-size dishes like these meatballs. This easy recipe for Meatball Souvlaki Pita Sandwich is much lighter than the typical meatball sandwich. I love the refreshing tart yogurt sauce poured over the meatballs. It’s a perfect compliment to the savoriness of the meatballs and balances out the pepper and horse radish spice.

This is good for a weekend lunch or you could make extra meatballs and serve them up as appetizers with the yogurt sauce as the dip.

Time: Total 40 minutes
Ingredients:
For Meatballs:
1 egg
1/4 cup dried bread crumbs
1 teaspoon dijon mustard
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound lean ground beef

For Sandwiches:
1 cup plain low-fat yogurt
1/2 cup grated english cucumber
1 clove garlic, minced
2 tablespoons dried mint
salt
ground black pepper
6 pitas, preferably whole wheat
2 cups shredded lettuce
2 small tomatoes, chopped
6 thin slices red onion

1. Preheat the oven to 400°F. Line a baking sheet with foil.

2. To make the meatballs: In a large bowl, whisk together the egg, bread crumbs, mustard, oregano, salt, and pepper. Mix in the ground beef. Shape the mixture into 24 meatballs and place them on the baking sheet. Bake for 15 minutes, or until the meatballs are no longer pink inside.

3. To assemble the sandwiches: In a small bowl, combine the yogurt, cucumber, garlic, mint, and salt and pepper to taste. Lay the pitas on a clean work surface and spread 1/4 cup of the yogurt mixture over each. Sprinkle equal portions of lettuce, tomatoes, and onion over each pita. Top with 4 meatballs each. Fold the pitas in half and serve.
