I’m always looking for an easy soup at the store. I like brothy noodle soups, veggie stews or rich tomato soups. Here’s one that has a delicous rich tomato broth with enough spice so that I don’t need to add any pepper or other seasoning. Trader Joe’s Spanish Sofrito Lentil and Vegetable Stew is imported from Spain and has whole simple ingredients: Lentils, Water, Tomato, Onion, Red & Green Pepper, Sunflower Oil, Carrot, Salt & Paprika. It comes in an easy microwavable bowl and is ready in 3 minutes. It’s perfect for a fast lunch at work or an easy dinner at home. There’s plenty for 1 person and could be served for 2 as a side dish.
