Recipe Review: Simplest Roasted Turkey

Here’s one of my favorite recipe tips from Gourmet on roasted turkey. Of all the various turkey articles and t.v. episodes I’ve read and watched, this is the most helpful and intuitive set of basic recipe tips for a juicy and flavorful whole roasted turkey or stuffed or even just the turkey breast. It has actually been useful for following along whenever I needed to remind myself what to do next or check on. As usual, always check temperature earlier for lighter weight turkeys and add a cup of water to dark-colored metal roasting pans before putting it in the oven. I suggest using an oven thermometer, placing it on the same rack as your turkey in the oven to make sure the temperature is accurate. Adjust the oven rack so that your turkey, not the roasting pan, can be positioned in the center of the oven. Recipe: by Gourmet [...]

Recipe Review: Black Truffle Roast Turkey with White Wine Shallot Gravy

I honestly don’t think there’s any roast turkey better than my sister’s. When I think her roast turkey can’t get any better, she floors me, and there I am amazed and drooling with turkey in both hands. I’m not sure what the magic ingredient or trick is. It doesn’t seem to matter what kitchen she’s in. I think she has the magic touch with roast turkeys and I want to try every recipe with her. Here’s one that I love for a truly special occasion, Black Truffle Roast Turkey with White Wine Shallot Gravy. For the gravy, whisking is very important when adding the flour to prevent lumps from forming and also to blend in as much flavor from the scraped caramelized bits of turkey meat. It’s a better idea to make the gravy ahead of time, so that you’re not rushing to get the meal to the table. Recipe: [...]

Recipe Review: Tuscan Turkey Soupy Noodles

The days are getting more chilly and owning up to the wintry holiday season. If I’m not cuddling up with my hot chocolate then it has to be with a hearty comforting bowl of soup. Here’s something you can easily follow-up with turkey leftovers, Tuscan Turkey Soupy Noodles. It’s best with homemade turkey stock, but you can also easily use any available chicken or vegetable stock instead. What I love most about this dish are the wide egg noodles that you can slurp up to chew on. Recipe: by Kemp M. Minifie Yield: 8-10 Servings Time: Total 3 1/2 hours, 40 min active Ingredients: Carcass from a 12- to 14-lb roast turkey, including skin, or 6 lb turkey wings 4 qt water 2 medium leeks, greens reserved and white and pale green parts washed (see Cooking Tips) and chopped 6 large garlic cloves, finely chopped 1/4 cup olive oil 1 [...]

Recipe Review: Turkey Soup with Lemon and Rice

Leave it to Martha Rose Shulman to write a recipe that makes me feel completely at home and pampered by just reading it. If you happened to have roasted your own turkey at Thanksgiving and proceeded to make the stock, this would be a perfect follow-up to that. Actually, this would still be perfect even if all you have is leftover turkey. This easy recipe is delicious because of the simply fresh and complimentary ingredients for a seasonal update to the comfort chicken soup. You can try adding carrots or wild rice instead of basmati for a bit more sweet and nuttier flavor. Recipe: by Martha Rose Shulman Yield: 6 Servings Time: Total 1 hour Ingredients: 2 quarts turkey stock or chicken stock 4 celery stalks, with leaves, thinly sliced 2 leeks, white part only, cleaned and sliced 4 garlic cloves, green shoots removed, thinly sliced Salt and freshly ground [...]

Recipe: Turkey Cheddar Burgers

I found a much more traditional recipe for Turkey Cheddar Burgers. I really love the flavor of sharp cheddar cheese in my sandwiches and with a turkey burger it’s perfect. These are even better with an oozing hot melty layer of cheddar within the turkey patty. I like my patties thin so that the focus is equally cheddar as it is turkey even though it doesn’t look as impressive. Since I don’t really like mayo, I use greek yogurt instead. I only use a tiny bit of the sauce and allow the tomato slices to create the wet texture in each bite. Recipe Adapted From: Ruth Cousineau, Gourmet.com Yield: 4 Servings Time: Total 35 minutes Ingredients: For burgers 1 large shallot, finely chopped (1/4 cup) 2 tablespoons olive oil 1/2 teaspoon salt 1/4 teaspoon black pepper 1 1/2 lb ground turkey (not labeled “all breast meat”) 5 oz extra-sharp Cheddar, [...]

Recipe: Stuffed Turkey Burgers with Roasted Peppers and Spinach and Greek Aioli

I don’t normally go for burgers, maybe if it’s turkey and definitely if it includes cheese. However, this one is more than just ground turkey with spices – it’s loaded with a special sauce. Here’s a recipe for Stuffed Turkey Burgers with Roasted Peppers and Spinach and Greek Aioli. I really don’t care for ketchup – I prefer marinara sauce instead of that sugared tomato sauce and usually don’t like sauces on my burger. However, this Greek aioli is the main reason why I really like this. Anything that I can dip into a feta yogurt sauce is something I’m going to devour. It’s like a greek cheese sauce. The trick is to use the greek yogurt which is much creamier and thicker than regular yogurt. The original recipe included beef instead of turkey and 2 tablespoons of mayo but I really don’t like mayo. If you prefer, you could [...]

Restaurant Review: Cafe Vida – Pacific Palisades

Walking down the quiet neighborhood streets in the Pacific Palisades, I was looking for cafe other than a Starbucks or Coffee Bean and found Cafe Vida. The buzzing of people around the place was a good sign and the menu confirmed it. This was a perfect place for my brunch and maybe a casual dinner sometime soon. Service was impeccable and our food arrived in record timing. The menu is filled with classic favorites made with healthy organic ingredients covering breakfast, sandwiches, soups, burritos, wraps, entrees, desserts and smoothies. Breakfast items are served until noon with an extensive selection of sides. Here are a few of my favorites – Ciabatta Rib-Eye Sandwich, Whole Grain Pancakes, Turkey Meatloaf Sandwich, Turkey Burgers, Egg White Omelette with Feta and Green Peppers, extensive selection of Organic Smoothies and Coffees, Organic Dark Chocolate Mocha (pic below), Herb Vinaigrette Salad with Sweet Potato Fries (pic above), [...]

Recipe: Turkey and Broccoli with Couscous

Most weekdays there is literally no time for me to do anything really. However, I am always starving by the time I’m home and have next to no patience to cook and prepare a decent meal. This recipe for Turkey and Broccoli with Couscous is insanely fast, about 15 minutes cooking time, and doesn’t leave me craving chips or bread with butter afterwards. The ingredients are really cheap and easy to find in any supermarket. The couscous is a healthier alternative to rice that’s just as satisfying. If you prefer your broccoli “al dente”, I recommend adding the broccoli during the last 3 minutes of cooking. Let me know what you think or if you have any recommendations. Recipe Adapted From: Women’s Health Magazine, WomensHealthMag.com Yield: 4 servings Time: Total 24 minutes, 8 minutes active Ingredients: 1/4 red bell pepper, cut into thin strips [...]

Grocery Bag: Sliced Italian Style Turkey Breast

I’m not a big fan of lunch meat unless it’s really deli meat and not mystery meat. It can get expensive and also hard to keep fresh when buying sliced deli meat but it’s as close to homemade fresh as you can get at the store. The Columbus Salame Company Italian Style Turkey Breast is one that I actually do prefer over the deli and is also affordable at Trader Joe’s. It truly does taste like it was just sliced off a roasted turkey breast that has been marinated and covered with an abundance of Italian herbs. Also, I love the handy resealable container – because there’s more than 2 servings in 1 package. Click here to see more Grocery Bag items. Let me know if you’ve tried this or have any recommendations.
